Ingredients
- 250 g all-purpose flour
- 2 large eggs
- 600 ml milk
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 100 g grated cheese (preferably Gruyère or Emmental)
- 1 small red bell pepper, finely chopped
- 1 small onion, finely chopped
- Fresh herbs (e.g., parsley or chives) for garnish
Instructions
- In a mixing bowl, whisk together the flour, eggs, milk, salt, paprika, and chili powder until smooth.
- Let the batter rest for 10 minutes.
- In a non-stick frying pan, heat a bit of olive oil over medium heat.
- Pour a ladleful of batter into the pan, swirling to cover the base. Cook for about 2-3 minutes until the edges lift and the bottom is lightly browned.
- Sprinkle some chopped onion and red bell pepper on top of the pancake, followed by a sprinkle of cheese.
- Flip the pancake and cook for another 1-2 minutes until the cheese melts and the pancake is cooked through.
- Repeat with the remaining batter and filling ingredients.
- Serve hot, garnished with fresh herbs.
