Ingredients
- 200g sushi rice
- 500ml water
- 3 tablespoons rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 4 nori sheets
- 100g cooked shrimp, peeled and deveined
- 1 small cucumber, julienned
- 1 avocado, sliced
- Fresh cilantro leaves
- Thai chili sauce for dipping
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- In a pot, combine the rinsed sushi rice and water. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes or until the water is absorbed.
- In a small bowl, combine rice vinegar, sugar, and salt. Heat until sugar dissolves. Stir this mixture into the cooked rice and let it cool.
- Place a bamboo sushi mat on a clean surface. Lay one nori sheet on the mat, shiny side down.
- Wet your hands to prevent sticking. Grab a handful of sushi rice and spread it evenly over the nori, leaving a 2 cm border at the top.
- Arrange a line of shrimp, cucumber, avocado, and cilantro across the center of the rice.
- Using the bamboo mat, start to roll the sushi away from you, pressing firmly but gently.
- Once rolled, use a sharp knife (wet) to cut the roll into bite-sized pieces.
- Serve with Thai chili sauce for dipping.
