Ingredients

  • 200g sushi rice
  • 500ml water
  • 3 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 4 nori sheets
  • 100g cooked shrimp, peeled and deveined
  • 1 small cucumber, julienned
  • 1 avocado, sliced
  • Fresh cilantro leaves
  • Thai chili sauce for dipping

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed sushi rice and water. Bring to a boil, then reduce heat to low, cover and simmer for 15 minutes or until the water is absorbed.
  3. In a small bowl, combine rice vinegar, sugar, and salt. Heat until sugar dissolves. Stir this mixture into the cooked rice and let it cool.
  4. Place a bamboo sushi mat on a clean surface. Lay one nori sheet on the mat, shiny side down.
  5. Wet your hands to prevent sticking. Grab a handful of sushi rice and spread it evenly over the nori, leaving a 2 cm border at the top.
  6. Arrange a line of shrimp, cucumber, avocado, and cilantro across the center of the rice.
  7. Using the bamboo mat, start to roll the sushi away from you, pressing firmly but gently.
  8. Once rolled, use a sharp knife (wet) to cut the roll into bite-sized pieces.
  9. Serve with Thai chili sauce for dipping.
