Ingredients

  • 2 medium carrots, grated
  • 100g cheese (Cheddar or similar, grated)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 tablespoon Thai red curry paste
  • 1 tablespoon soy sauce
  • Oil for frying
  • Salt and pepper to taste
  • Fresh coriander for garnish (optional)

Instructions

  1. In a bowl, mix the grated carrots, cheese, red curry paste, soy sauce, salt, and pepper until well combined.
  2. Divide the mixture into two portions and shape them into patties.
  3. Set up a breading station: place the flour in one plate, the beaten eggs in another, and the panko breadcrumbs in a third plate.
  4. Coat each patty first in flour, shaking off the excess, then dip in the beaten eggs, and finally coat completely in panko breadcrumbs.
  5. Heat oil in a frying pan over medium heat. Once hot, carefully add the patties.
  6. Fry for about 5-7 minutes on each side, or until golden and crispy.
  7. Remove from the pan and drain on paper towels.
  8. Garnish with fresh coriander if desired and serve hot.
