Ingredients
- 500g pork tenderloin, cut into thin strips
- 1 medium onion, sliced
- 1 can (400g) pineapple chunks in juice, drained
- 100g raisins
- 2 tablespoons red curry paste
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon vegetable oil
- 1 clove garlic, minced
- 1 teaspoon ginger, grated
- 1 bell pepper, sliced (color of your choice)
- Fresh coriander, for garnish
- 1 tablespoon sesame seeds (optional)
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the minced garlic and grated ginger, sauté for about 30 seconds until fragrant.
- Add the pork strips to the skillet and cook until browned, about 5-7 minutes.
- Stir in the sliced onions and bell pepper, and cook until the onions become translucent.
- Add the red curry paste, soy sauce, and fish sauce, stirring to coat the pork and vegetables evenly.
- Mix in the pineapple chunks and raisins, cooking for an additional 10 minutes until heated through.
- Adjust seasoning if needed, and serve hot, garnished with fresh coriander and sesame seeds if desired.
