Ingredients

  • 500g pork tenderloin, cut into thin strips
  • 1 medium onion, sliced
  • 1 can (400g) pineapple chunks in juice, drained
  • 100g raisins
  • 2 tablespoons red curry paste
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon vegetable oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • 1 bell pepper, sliced (color of your choice)
  • Fresh coriander, for garnish
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and grated ginger, sauté for about 30 seconds until fragrant.
  3. Add the pork strips to the skillet and cook until browned, about 5-7 minutes.
  4. Stir in the sliced onions and bell pepper, and cook until the onions become translucent.
  5. Add the red curry paste, soy sauce, and fish sauce, stirring to coat the pork and vegetables evenly.
  6. Mix in the pineapple chunks and raisins, cooking for an additional 10 minutes until heated through.
  7. Adjust seasoning if needed, and serve hot, garnished with fresh coriander and sesame seeds if desired.
