Ingredients
- 1 medium red cabbage, chopped
- 2 medium onions, diced
- 2 carrots, grated
- 2 cloves of garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon caraway seeds
- 1 vegetable stock cube
- 1 liter of water
- Salt to taste
- Black pepper to taste
- 2 tablespoons apple cider vinegar
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onions and minced garlic, and sauté until the onions are translucent.
- Stir in the grated carrots and caraway seeds, cooking for an additional 5 minutes.
- Add the chopped red cabbage to the pot and mix well.
- Dissolve the vegetable stock cube in the water and pour it into the pot.
- Bring the mixture to a boil, then reduce heat and let it simmer for about 30 minutes, or until the cabbage is tender.
- Stir in the apple cider vinegar and season with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley.
