Ingredients
- 500 g beef chuck, cut into cubes
- 2 tablespoons olive oil
- 2 medium onions, chopped
- 2 garlic cloves, minced
- 2 medium tomatoes, peeled and diced
- 1 can (400 g) of pineapple chunks in juice, drained
- 1 red bell pepper, diced
- 1 tablespoon brown sugar
- 2 tablespoons paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 500 ml beef stock
- Fresh coriander for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onions and garlic, sauté until softened and translucent.
- Add the beef cubes and brown all sides for about 5-7 minutes.
- Stir in the diced tomatoes, pineapple chunks, red bell pepper, brown sugar, paprika, ground cumin, oregano, salt, and pepper. Mix well.
- Pour in the beef stock, ensuring the meat is covered. Bring to a boil.
- Reduce the heat and allow to simmer for about 1 hour, or until the meat is tender and the sauce has thickened, stirring occasionally.
- Adjust seasoning to taste.
- Serve hot, garnished with fresh coriander.
