Ingredients

  • 500 g beef chuck, cut into cubes
  • 2 tablespoons olive oil
  • 2 medium onions, chopped
  • 2 garlic cloves, minced
  • 2 medium tomatoes, peeled and diced
  • 1 can (400 g) of pineapple chunks in juice, drained
  • 1 red bell pepper, diced
  • 1 tablespoon brown sugar
  • 2 tablespoons paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 500 ml beef stock
  • Fresh coriander for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onions and garlic, sauté until softened and translucent.
  2. Add the beef cubes and brown all sides for about 5-7 minutes.
  3. Stir in the diced tomatoes, pineapple chunks, red bell pepper, brown sugar, paprika, ground cumin, oregano, salt, and pepper. Mix well.
  4. Pour in the beef stock, ensuring the meat is covered. Bring to a boil.
  5. Reduce the heat and allow to simmer for about 1 hour, or until the meat is tender and the sauce has thickened, stirring occasionally.
  6. Adjust seasoning to taste.
  7. Serve hot, garnished with fresh coriander.
