Ingredients

  • 250g Chow Mein noodles
  • 200g chicken breast, thinly sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, julienned
  • 1 green bell pepper, julienned
  • 100g mushrooms, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the Chow Mein noodles according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add sliced chicken breast and cook until golden brown and cooked through.
  4. Stir in sliced onion and minced garlic, sauté until the onion is translucent.
  5. Add red and green bell peppers, and mushrooms. Stir-fry for about 3-4 minutes until the vegetables are slightly tender.
  6. Add cooked Chow Mein noodles to the skillet along with soy sauce, tomato paste, ground cumin, salt, and pepper. Toss everything together until well combined.
  7. Cook for another 2-3 minutes until heated through.
  8. Remove from heat, garnish with fresh parsley, and serve hot.
