Ingredients
- 500 g pork shoulder, cut into cubes
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2-3 green chilies, chopped
- 2 tablespoons white vinegar
- 1 tablespoon tomato paste
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon paprika
- 1 teaspoon turmeric
- 1/2 teaspoon cinnamon
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- In a large bowl, combine the pork cubes with vinegar, garlic, ginger, green chilies, cumin, coriander, paprika, turmeric, cinnamon, and salt. Mix well and let marinate for at least 30 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they are golden brown.
- Add the marinated pork along with the marinade to the pot. Cook until the pork is browned on all sides.
- Stir in the tomato paste and mix well. Add enough water to cover the meat, then bring to a boil.
- Reduce heat, cover, and let simmer for about 1 hour or until the pork is tender.
- Adjust seasoning with salt if needed, and let cook for an additional 10-15 minutes uncovered to thicken the sauce.
- Serve hot, garnished with fresh coriander leaves.
