Ingredients
- 2 cups ground chickpeas or lentils
- 1 large onion, finely chopped
- 3 cloves of garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 tablespoons berbere spice blend
- 4 cups vegetable broth
- 2 tablespoons tomato paste
- 4 tablespoons olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onions and sauté until they become translucent and soft.
- Stir in the minced garlic and grated ginger, cooking for an additional 2-3 minutes.
- Add the berbere spice blend and stir until the mixture is fragrant, about 1-2 minutes.
- Incorporate the tomato paste, mixing well with the other ingredients.
- Gradually pour in the vegetable broth, stirring continuously to combine well.
- Bring the mixture to a simmer and then add the ground chickpeas or lentils.
- Cook uncovered for about 20-25 minutes, stirring occasionally until the stew thickens to your desired consistency.
- Season with salt to taste.
- Serve hot, garnished with fresh cilantro, and enjoy with injera or rice.
